By this I mean I want to type in Germany, and see all German MMA fighters, etc.
Wiki only shows me the country or a pic of the flag. ragtownhero, can you maybe point me to where on either of those sites I can find a list of all fighters from a certain country? I found profiles, but couldn’t find a list.
Where can I find a list of what countries MMA fighters are from ?

http://www.mixedmartialarts.com might have a function like that I know they have quite a few search options, I believe on http://www.sherdog.com after you look up a fighter by name it shows where they are from and I believe it lets you clock on that country and pulls up other fighters from there.

just go to google and type the fighters name and wiki After it. like this
